Born of
the Pampas

In the vast grasslands of Argentina, where the horizon stretches endlessly and the gauchos ride beneath immeasurable skies, a tradition of fire and fellowship was born. For centuries, the art of the asado has brought communities together around the flame.

Since 1994, Gaucho has carried this spirit to the finest addresses in Britain, honouring the ritual of open-fire cooking with the world's most exceptional beef, sourced from the Pampas and beyond. Every cut tells a story. Every flame, a legacy.

Chapter II

The Fire

Our parrilla masters tend the flame with the patience and precision of their forebears. Each fire is built from native hardwoods, reaching the perfect temperature over hours, never rushed. The result is beef that carries the soul of the flame within every fibre -- caramelised, smoky, transcendent.

"The fire does not hurry. Neither do we."

The Cellar

Argentina's finest vineyards, curated to complement every course.

Tasting Notes Deep violet with aromas of blackberry, plum, and dark chocolate. The palate reveals layers of ripe black fruit, subtle oak, and velvety tannins leading to a long, elegant finish. Complex and intensely aromatic.
Perfect Pairing Exceptional with our Ancho ribeye. The wine's structured tannins cut through the rich marbling, while its dark fruit notes complement the smoky char of the parrilla. A classic combination.
Tasting Notes Intense ruby red with violet reflections. Notes of red cherry, raspberry, and a hint of vanilla from twelve months in French oak. Medium-bodied with bright acidity and a fresh, lively character.
Perfect Pairing Beautifully matched with our Chorizo Criollo. The wine's bright acidity and red fruit lift the spiced, smoky richness of the house-made chorizo, creating a vibrant opening to any meal.
Tasting Notes Deep garnet with aromas of black cherry, tobacco leaf, and espresso. Full-bodied with firm yet polished tannins, showing remarkable concentration and a mineral-driven finish shaped by high-altitude terroir.
Perfect Pairing Ideal alongside the Lomo fillet. The wine's power and concentration match the purity of the beef, while its mineral finish and subtle smokiness echo the open-flame cooking technique.
Tasting Notes Inky purple-black with an extraordinary bouquet of violets, cassis, and crushed stone. Exceptionally textured with silky tannins, layers of dark fruit, graphite, and an almost endless finish. A wine of rare elegance.
Perfect Pairing Reserved for special occasions, pair with the Tira de Ancho short rib. The wine's extraordinary depth and complexity mirrors the slow-grilled intensity of the cut, with its bone marrow creating an unforgettable union.

Chapter V
An evening at Gaucho is not merely dinner. It is a journey into the heart of Argentina, where the warmth of the fire is matched only by the warmth of the welcome. Every detail, from the first sip of Malbec to the final ember, is considered.
